Our most frequently asked question is, what does it mean to buy a quarter cow?
Our Wagyu X Angus (Wagyu crossed with Angus) animals hang at around 650-700lbs, so one quarter would be 162.5lbs. Pure Angus and Angus X Hereford animals usually hang out around 725-775lbs so a quarter is 181.25lbs. This is not to say that you will get 162.5lbs or 181.25lbs of beef when you order a quarter, that is simply the hang weight. Depending on how the animal is cut (steaks with bones vs without bones, for example) you will receive 63-68% of the hang weight in edible beef. The percent yield is also based on the animal, its sex, parents etc - no two animals are alike.
A quarter will get you roughly the following cuts into your freezer:
* 6 rib steaks
* 6 porterhouse steaks
* 1/4 brisket (roughly 4lbs)
* 1 top round and 1 bottom round roast (4lbs each)
* 1 eye round roast
* 1 flank and flat steak
* 6-7 top round sirloin london broil (steak)
* 6-7 sirloin steaks
* 3 packs of short ribs
* 40 lbs ground beef
(Wagyu and Angus will get you roughly the same amount of cuts, the weight difference will be in the ground beef largely).
